Easier way to convert album art image files to album art tags?
I've noticed that I have a lot of albumart.jpg in my library, and I'm wondering if there's an easier way to incorporate them into the music tags. The only solution I can think of right now is copying from an image viewer app, and then pasting in MM, but is there a less tedious way?

You can Drag & Drop from File Explorer on the Artwork tab, that may work quicker for you.

Yeah, dragging and dropping is a bit faster.
On an aside, when I'm done with associating album art to the tags (and not as folder jpg), will these stay on permanently? I want to make a few backups of my library once I'm done fiddling with it, so I never have to do this again.

Embedded Artwork is permanent, which is its benefit.

Make sure you check the option to embed where possible, and look at some of the images in properties, artwork where it will say at the bottom "stored in tag" to confirm.
Once stored in tag, you can safely delete all the album.arts from your computer.

Re: Easier way to convert album art image files to album art tags?
Is there a batch/select multiple files method to copy all artwork that is stored in the music's folders to the MP3 file tags.
I have a large number of files where all the artwork shows correctly on MMW but it doesn't show the artwork for many in MMA on my Android tablet. I think the ones that work have the artwork in the tag, but on Windows I haven't previously been consist about that - so I'd like to fix them all in one go. Is that possible?

Yes, that means MM4 Script needs to be ported to MM5
Or you can use MM4 + Script and then rescan MM5 library
