Hi, I've set up a MM server, and I'm wondering if I can connect it on another PC using a separate install of MM, so that I can just use the other database. Is this doable?

Yes, DLNA servers will show in the Media Servers node in the Media Tree and MediaMonkey can act both as server and as client.
