Ah, I'd assumed that since it is released as "beta" and since its download path says "beta" and since this forum name says "beta", that it was beta.

That's really sad if true. MM claims explicitly otherwise:
About Track Properties
Shown below is a table of all properties stored in the Library vs. which properties are stored in Tags. 'Yes' indicates that the information is included in the tag, 'No' indicates that it isn't,

That could not explain the reported behaviour:

Well done Dev Team for such a promising program! Here are some problem reports you might find useful. On MediaMonkey (non-skinned).exe Version 3.0.0.1017, Win XP SP2. 1 The Player pane looks really ugly. To avoid users wasting your time with such reports, is there somewhere we can read a list of the offered functions that are non-functional?

Not in the release notes Known Issues, as far as I can see.
