That issue has been fixed in the latest alpha of MediaMonkey 5.0.4. On 5.0.3 playing from File Explorer will instead restart the last played song in MediaMonkey. That's awesome! I deleted all of the clients, and the two Defender rules. When I reopened mm5, it didn't recreate anything, there were no clients to automatically share with any devices, so far TV has not asked my computer anything. I think my new computer is on "network 2" and for some reason the TV does...

The collection's were showing in the mediamonkey tree. So I updated to version 5.02, no changes. I then rebuilt the database.
