You can scan current folder using "Add/Rescan" from File menu. Also this "current folder scan" can be used in Folders as well.

Right-click on any collection node (Music node for example) and select 'Configure collection and nodes'. This open Media Tree Options and here you can add new collection.

re 1) touch mode have different layout that desktop mode and for this reason custom layouts shouldn't work in touch mode
